PERSIAN LIME PIE
(4 Servings)
Ingredients:
The filling
– ⅔ cup of Persian lime juice and 2 tsp grated lime zest (about 3-4 limes)
– 14 oz can of condensed milk
– 4 large egg yolks
The crust
– 1 ½ cups graham cracker crumbs
– ⅓ cup white sugar
– 6 tbsp melted butter
– ½ tsp cinnamon
The topping
– 1 cup heavy cream
– 2 tbsp powdered sugar
Method
Persian lime is the oval fruit 1.5 to 2.5 inches wide and 2 to 3 inches long, often with elongated or nippled ends, usually seedless or with few seeds; it is larger and has thicker skin than the key lime. However, it is usually picked and sold when green, the fruit is yellowish-green, or yellow when fully ripe. The fruit has a fragrant, spicy aroma and tart flavor, but the aroma and taste are less intense than lime.
