SEASONALITY: ALL YEAR
MASHED SWEET POTATOES
– Six sweet potatoes, peeled and cubed
– ¾ cup milk
– ½ cup butter
– ¾ cup maple syrup
Bring a large pot of salted water to a boil. Add sweet potatoes and cook until tender, 20 to 30 minutes.
With an electric mixer on low, blend sweet potatoes, slowly adding milk, about 1/2 a cup. Add butter and maple syrup to taste. Blend until smooth. Use to achieve desired texture.
